Instant Dry Yeast
Yeast is a fascinating egg-shaped single-cell fungus, discernible only under a microscope. In the delightful process of baking yeast-leavened bread, the yeast diligently ferments sugars present in the flour, releasing carbon dioxide. Due to the dough's elastic and stretchable nature, this gas cannot escape, causing the dough to beautifully inflate, or rise.

High Sugar Yeast Low Sugar Yeast
This yeast variant is ideal for delicious bread with a high content of sugar or oil (sugar percentage 7~18%). Meanwhile, low sugar instant dry yeast is perfect for crafting bread that is sugar-free or has low sugar content (sugar percentage 0~7%).
For making bread with high sugar or heavy oil (sugar percent 7~18%), please use instant dry yeast (high sugar). Low sugar instant dry yeast is used in making sugar-free or low sugar (sugar percent 0~7%) bread.
