Instant Dry Yeast
Yeast is an egg-shaped single-cell fungus, invisible to the naked eye and only observable under a microscope. When used in baking yeast-leavened bread, yeast ferments the sugars in flour, releasing carbon dioxide. The elastic, stretchable dough traps this gas, causing the dough to inflate or rise as the expanding gas pushes against the dough's confines.

High Sugar Yeast Low Sugar Yeast
For bread-making that involves heavy sugar or oil content (sugar percentage 7~18%), it is advisable to use instant dry yeast designed for high sugar. Conversely, low sugar instant dry yeast is optimal for creating bread that is either sugar-free or features a low sugar content (sugar percentage 0~7%).
Choose high sugar yeast for sweet or rich doughs (sugar percentage 7~18%). For low sugar or sugar-free recipes, opt for low sugar yeast (sugar percentage 0~7%).
