What is yeast?

Yeast is an egg-shaped, single-celled fungus, only visible under a microscope. When used in baking yeast-leavened bread, yeast ferments the sugars present in flour, releasing carbon dioxide. The dough's elastic and stretchable nature traps the carbon dioxide, causing the dough to expand and rise.

For bread recipes with heavy sugar or oil content (sugar percent 7~18%), use instant dry yeast ideal for high sugar. For sugar-free or low sugar baking (sugar percent 0~7%), opt for low sugar instant dry yeast.
