Instant Dry Yeast
Yeast is a fascinating, egg-shaped single-cell fungus that is microscopic, yet mighty in its role in baking. Invisible to the naked eye, yeast becomes a bakery powerhouse when used in yeast-leavened bread. It performs a vital function by fermenting the sugars in flour, resulting in the release of carbon dioxide. The elastic and stretchable dough then traps this gas, causing it to expand and rise beautifully as the growing gas gently presses against the dough's limits.

High Sugar Yeast Low Sugar Yeast
When crafting delectable breads rich in sugar or oil (with sugar content ranging from 7% to 18%), the use of instant dry yeast specially formulated for high sugar content is ideal. On the other hand, for breads that are low in sugar or completely sugar-free (sugar content ranging from 0% to 7%), low sugar instant dry yeast is the perfect choice to guarantee delicious results.
Select high sugar yeast for recipes that entail sweet or rich doughs (sugar percentage 7~18%). For recipes with low sugar or no sugar, opt for low sugar yeast (sugar percentage 0~7%).
