High Sugar Yeast Low Sugar Yeast
When crafting bread with a high content of sugar or oil, specifically within the range of 7% to 18% sugar, high sugar instant dry yeast is the ideal choice. Conversely, for sugar-free or low sugar bread, with a sugar content of 0% to 7%, low sugar instant dry yeast is the recommended option.
For bread with a sugar content of 7% to 18%, opt for high sugar instant dry yeast, while for bread with 0% to 7% sugar content, use low sugar instant dry yeast.
