Instant Dry Yeast
Yeast is a remarkable, egg-shaped, single-cell fungus visible only under a microscope. It plays a pivotal role in the world of baking, particularly in creating yeast-leavened bread. By fermenting the sugars in flour, yeast releases carbon dioxide. This gas is encapsulated by the elastic and stretchable dough, resulting in the dramatic inflation or rise of the dough.

High Sugar Yeast Low Sugar Yeast
For crafting exquisite bread with high sugar or heavy oil (sugar content between 7~18%), the use of instant dry yeast formulated for high sugar is recommended. Conversely, for sugar-free or low-sugar bread (sugar content ranging from 0~7%), low sugar instant dry yeast is ideal.
For bread with a sugar percentage of 7~18%, please use instant dry yeast formulated for high sugar. For bread with sugar percentage 0~7%, low sugar instant dry yeast is recommended.
